A whiskey that is double oaked is aged in 2 barrels before being bottled for resale. The 2nd barrel is sometimes toasted, but more often it is a new charred oak barrel that really imparts its oaky characteristics onto the whiskey. The flavors that the oak barrels provide to the whiskey is typically described as caramel, brown sugar, vanilla, chocolate, nutmeg, earthy, leather, toast, and/or bready and then any combination there on too. A few years ago Mick moved to South Carolina so they don't get to visit with each other as often as they used to. Being the big John Wayne and Western fan that he is, Mick picks 4 bottles that share that theme for Joe and Todd to join him in tasting. Some smooth tasty bourbon is had in this episode. Todd recalls a trip to a Kentucky Distillery That he was able to pick up some rare bourbon from and trade some with Mick.

The toasted barrel is more gently heated which creates a toasted flavor on the wood. A distiller can decide if they want a light toast or a heavy toast depending on the desired taste.
